CHARDONNAY

Technical card

Production area: North of Bari -Contrada Schinosa –Trani, at an altitude of 70 meters.
Grapes: 100% Chardonnay.
Vineyards: 2,5 Hectares of Chardonnay. Vines are trained using the spurred cordon method on moderately loose-packed calcareous soil.
Wine Making: A brief maceration of the broken grape skins at low temperatures precedes the soft pressing of the grapes and cleaning of the musts by simple static clarification. Fermentation takes place with carefully selected yeasts and at constant temperatures that never exceeds 15 ° C. A small part of the still fermenting juice is then poured into barrels where it completed the fermentation. After the fermentation the wine stored in its blend.
Ageing: Ageing takes place in steel tanks. Successive refinement after bottling for 30 days before the wine is released.
