Type: Sparkling red wine
Vines: Croatina 95% – Barbera and Uva rara 5%
Winemaking: After careful selection of the grapes and the press-destemming, the must is left to ferment with the skins at a controlled temperature for 10-15 days, during which more replacements are performed. At the end of alcohol fermentation the racking is carried out.
Organoleptic characteristics: Ruby ​​red in colour with violet hues, brilliant, it has a fine bouquet with clear and pleasant hints of wild berries. To the palate it is sweet with a long finish and hints of cherry, maintaining a pleasant tannins.
Alcohol content: 12,5% vol
Combinations: It combines very well with many foods: excellent with cured meats, meat-based first courses (agnolotti), stews, roasts and red meats. Interesting with seafood dishes such as caciucco.
Serving temperature: 16°/20° C
Storage: In a cool and dry place for 18 months.
Formats: 0,75 l – 1,5 l – Loose.
